Traditional sparkling wines from Piemonte
Cascina Pastori Colombo is located in the heart of the Alta Langa, a partly unspoilt area. The wine estate is located in the town of Bubbio in the province of Asti, a 20-minute drive from Barolo in Piemonte.
In 2004, owner Antonio Colombo, a renowned cardiologist, bought the first hectares of vineyards and now has 10 hectares in a landscape of silences and forests and fertile soil with the aim of improving the pinot nero grape in the Piedmont production area, of which the cultivation is demonstrated as early as 1871. An ideal environment thanks to the positive influence of the wind coming from the Ligurian Sea, the soils rich in limestone and clay and the temperature fluctuations of at least 10 degrees Celsius between day and night, which promotes the ripening of the grapes.
Alta Langa denomination Metodo Classico
With the help of master winemaker and oenologist Riccardo Cotarella, his dream has become a reality. In addition to the special quality pinot nero wines, this wine estate distinguishes itself with an absolute must. We are talking about the sparkling wine tradition associated with the Alta Langa denomination; the metodo classico of Piemonte, where the second fermentation takes place in the bottle, as is also used at the large wineries in Champagne. His wines regularly receive three red wine glasses as the highest score from Gambero Rosso.
For Antonio Colombo, environmental sustainability had to be an essential factor in his wine adventure. For example, in his production system he makes very minimal use of mechanical means and between the vines, pesticides with a very low impact are used.
Nowadays his son Andrea Colombo follows the daily activities with none other than Riccardo Cotarella by his side.
